Spicy Shrimp Pasta Salad

  • 16 ounces of rotini pasta
  • Olive oil
  • Sea Salt
  • 2 pounds of shrimp, cooked, peeled, and deveined
  • 1/3 cup of green onions, chopped
  • 1/2 cup of grape tomatoes, halved
  • 1/2 cup of roasted peppers, chopped
  • 1/4 cup of fresh cilantro, chopped
  • Shrimp Marinade/Dressing*
  • Salt and Pepper

Cook pasta in boiling water with olive oil and sea salt following package directions. When pasta is al dente drain and toss with a 1/4 cup of the dressing. Add shrimp, green onions, tomatoes, and peppers and toss with rotini. Taste to see if you need additional dressing or adjust with salt and pepper. Add cilantro and refrigerate for 2 to 3 hours or until chilled.

* Marinade/Dressing:

  • 1/2 cup tarragon vinegar
  • 1/2 cup white wine vinegar
  • 2 teaspoons black pepper
  • 1/3 cup of dry mustard
  • 3 teaspoons red pepper flakes
  • 1 tablespoon of salt
  • 1/2 cup canola oil
  • 1/2 cup extra virgin olive oil
  • 6 cloves of minced garlic

Combine ingredients for marinade and mix thoroughly with a hand blender. Store in refrigerator for 2 weeks.
